Honey lemon baked Salmon

2 boneless salmon filets, split
2 tbsp honey
2 tbsp lemon juice
1 tbsp canola oil
1 tsp tarragon

Lightly spray glass baking dish with cooking oil.  Combine honey, lemon juice & canola oil in a small bowl.  Place salmon halves skin side down on baking dish.  Brush with honey & lemon mixture.  Sprinkle with tarragon.  Bake in preheated 500 F oven for 12 minutes.  Place under broiler for another 2 to 3 minutes or until lightly browned.  Serve with lemon slices.

For variety, use orange juice in place of the lemon juice. 

Chicken Curry

A good, easy recipe.  Kick it up if you want with a bit more curry and garlic if you like!

2 Tbsp Olive Oil
1 Tbsp crushed Cumin
3 (or more) Garlic cloves, finely chopped
1/3 cup Onion, finely chopped
1 can Tomatoes (16 oz) *
2 Tbsp Curry Powder
1 Tsp Turmeric
2 Tbsp Water
cup chopped fresh cilantro
6 boneless/skinless Chicken Breast cut into 1 inch pieces
2 cups cooked Rice

Heat Olive oil in a large skillet over medium heat.  Add cumin & stir until fragrant.   Add garlic & onions.  Cook 2 minutes. Stir in tomatoes.  Allow to simmer about 5 minutes.

In a small bowl, combine curry, turmeric & water to form a paste.  Add the paste into the simmering mixture.  Add chicken to coat.  Reduce heat & simmer for about 20 minutes.  Salt & pepper to taste.

Stir in rice & cilantro.  Serve hot.  Serves up to 6 to 8 people.

* use prepared salsa for an extra spice up.

For added taste & texture add cup roasted cashews or peanuts.

Prep to table in about 45 minutes.
